Elisabeth’s Bosch Bread Recipe

In a small bowl combine:

1 tbsp. sugar
1 tbsp. yeast
1/2 cup warm water

“Proof” this mixture in a warm oven with the pilot light on for 15 minutes.

While the yeast is “proofing” put the following ingredients into the Bosch and mix together on the lowest speed for a few minutes.
2 cups warm water
1/4 cup oil
1 tbsp. molasses
1 tbsp. honey

2 tsp. salt
2 tbsp. flax seed
2 tbsp. sunflower seeds
2 tbsp. sesame seeds
2 cups whole wheat flour
1/4 cup do-pep (vital wheat gluten flour)

After the yeast is “proofed” add it to the mixture in the Bosch and mix on lowest speed for five minutes.  Then add 2 more cups of whole wheat flour and 2 cups of white unbleached flour and mix on highest speed for 7 minutes.

Turn the dough out onto the bread board. Let it rest for five minutes. Divide the dough in half and roll out with a rolling pin to remove air bubbles. Shape into two loaves and let raise, covered, in a warm place for 30-40 minutes until it is approximately one inch above the edge of the bread pan.
After oven is preheated to 350° bake bread for 40 minutes. When done, immediately remove bread from pans and cool on racks.
