Sweet Potato Casserole Summary – 5 or 6 sweet potatoes 1/2 stick of butter 1/2 cup brown sugar 2 tsp of cinnamon or nutmeg or pumpkin spice 1/2 pound dried apricots
Boil and peel potatoes, cut and mash Cut apricots into quarters or smaller Melt butter Mix all other ingredients and fold into mashed potatoes Bake at 350 degrees for 20-25 minutes. Should be bubbly around the edges and a little browned on top.
