Remake No-Bake (dump) Cookies

Ingredients
  • 2 cups coconut sugar
  • 2 cupsXylitol
  • 1/2 cup organic cocao
  • 1 cup coconut milk
  • 1/2 pound butter
  • 2 tsp vanilla
  • 1 cup nut (almond, sunflower seed, anything but peanut) butter
  • 6 cups gluten free uncooked oatmeal

Mix first 5 ingredients in sauce pan and melt at medium heat.  Bring to boil for one minute.  Add nut butter and vanilla, stir until all ingredients are mixed in.  Add Oatmeal mix will.  Drop on parchment or wax paper.  this is a double batch recipe.

Try using only the coconut sugar or xylitol.  I was going for low glycemic, not totally dairy free because of the butter.  If you find a good substitute for the butter let me know.  I used the almond butter and loved it.  Very easy to make and the kids can help too.
